Chocolate Eclairs are delicious, let's be honest. They're bad for us, but we don't care. They're a fantastic little treat and there is literally no better place to try them than at Wedges!
So, where did they come from? Where all great cakes originate, France of course! In the 19th Century they were called a 'Pain à la duchesse' or petite duchess until 1850. That is a popular member of the Pie family which is server all over the world.
The first known English recipe for an Eclair appears in the Boston Cooking School book which was published in 1884.
